POWER Your Triathlon Training! Breakfast Ideas For Triathletes

These recipes are tasty, easy to make and full of healthy nutrients to keep triathletes fit and support their training. In my opinion breakfast is so underappreciated by athletes, and I want to encourage you to try some different, tasty breakfasts! If you're training for a triathlon like an ironman you need to fuel your training well, and so nutrition for triathletes is essential! Recipes/Ingredients: Overnight oats: Mix together in a leakproof container: 60g rolled oats 10 pumpkin seeds 10g chia seeds 10g sunflower seeds 40g of frozen cherries 40g frozen blueberries 200ml milk of choice (less if you want it stickier, more if you want it sloppier!) Optional: 10g protein powder Huevos rancheros: Make the quick radish pickle: Finely slice the radish and place into a small bowl. 1 radish In a small pan, heat the white vinegar, sugar and salt. 30 g white vinegar, 0.5 tsp sugar, 0.25 tsp salt Once the sugar and salt have dissolved and the vinegar begins to boil, pour the liquid into the sliced radish bowl and store in the fridge. In a medium sized non-stick pan, heat the olive oil. Add the onion and turn the heat to low. Cook the onion until the pieces are soft. Half-quarter red onion depending on preference Add the chopped garlic and half the chopped jalapeño and continue cooking until the edges of veggies begin to brown. 1 clove of garlic and some jalepenos Add the crushed tomatoes and salt and pepper to taste, mix and cook for about one minute. If it feels slightly dry, add a tablespoon of water. Salt and pepper to taste, 60g crushed tomatoes Crack the eggs into the sauce and cook at low heat until the whites are cooked. If necessary, cover the pan with a lid for about a minute to cook the egg whites completely. However, avoid over-cooking the egg yolk – make sure it remains runny. Season the eggs with salt and pepper. 2 large eggs Heat the black beans and your carb of choice Carbs + 1/2 can black beans Immediately serve the eggs with the tomato sauce on top of the tortillas with a side of black beans, sliced avocado and radish pickles. Half ripe avocado Sprinkle the remaining chopped jalapeño, cilantro leaves and enjoy. sprig cilantro/coriander, fresh Pancakes: In a large mixing bowl, measure 175g of wholemeal flour In a separate bowl mix 2 eggs with 300 ml of semi skimmed milk *At this point put the oven onto a low heat so that your pancakes can stay warm* In the mixing bowl with the flour, create a well in the centre and add the milk egg mixture bit by bit, and mix it until you get a smoothish consistency. If the mix is a bit thick you can add a bit more milk. Heat a frying pan on a medium heat with a little bit of oil and then wipe it around, or alternatively every time just tip it into a mug to reuse after each pancake Pour the mixture in, give it a swirl around and then a minute or two to form Once it's lightly browned turned it over to do the other side, and if you're feeling really adventurous you can give it a flip.
