Molecular gastronomy is the scientific approach of cuisine from primarily the perspective of chemistry. The composition , properties (mass, viscosity, etc) and transformations (chemical reactions, reactant products) of an ingredient are addressed and utilized in the preparation and appreciation of the ingested products.
